This is What I am Eating These Mornings with Katie Huddleston

Like us all, I’m always looking for something quick to grab walking out the door that I can either eat on my way somewhere or on breaks. I’ve tried overnight oats and don’t love the cold texture so this is a great alternative and takes a couple minutes to put together while your coffee is brewing. I scoop this into a jar in the morning and then it’s ready to go when I leave the house. I make this and just keep it room temp- you could refrigerate, but not needed and will solidify it more.

Coconut Superseed Cereal

What you’ll need:

  • Small jar or cup with lid
  • 3 T quick oats
  • 2.5 T chia seeds
  • 2 T hemp seeds
  • A sprinkle of pumpkin seeds
  • 1/3 cup coconut milk ( or milk or choice)
  • A few splashes of coconut water (optional)

(measurements approximate- feel free to add more or leave out whatever if you don’t have)

Put all the oats and seeds in the jar. Add the coconut milk and a bit of coconut water (optional) mix and enjoy! 

Important Note: You can eat it right away and the texture will be more of cereal with milk consistency or if you prefer something thicker, wait to eat it and it turns into yummy chia pudding coconut goodness that keeps you full for a long time. Add a drizzle of maple syrup for extra sweetness.
