This is a keeper for future meals! The Eggplant Parmesan from Food and Wine is a make-ahead dish for when you are feeding a crowd and prefer to be sipping a cocktail with them instead of prepping for dinner. Assemble a day or two before your guests arrive and then pop in the oven while you are socializing. Pair with a simple salad and an Italian Sangiovese wine.
