Ratatouille Recipe

Ratatouille for me is a summer yum that is perfect as we head into the fall. This recipe is time consuming but worth the trouble. I make this dish when I don't want to be in the kitchen cooking while I am entertaining. 90% of the prep can be done before your guests arrive. Assemble and pop in the oven while sipping a cocktail before dinner!
